I love food. I love cooking. Along with music, food is the greatest thing on the planet. What better way to evoke the senses, than with the aroma, sight & taste of delicious food. It really is the BEST!
I love heat in my food but find that so many sauces destroy the dish. Why put something on your food that masks the taste and causes physical discomfort? I want to taste my food as well as enjoy the heat.
The year is 2020 and Covid has changed the world. I was out of work during lockdown and had a lot of time on y hands. One of the activities that kept me sane during this period was cooking. The Facebook Group, "What's For Dinner In Dubai" was a great source of comfort, motivation and inspiration and pushed me to up my cooking game.
I spent every day cooking, trying new dishes and perfecting old ones. It really was great therapy and saved me during this time.
Seeing the success of 2 fellow hot sauce lovers, inspired me to try my own hot sauce. Inspired by my Trini roots I wanted to create a range of hot sauces that had the feel of the Caribbean but with its own identity. Apart from the normal store bought brands, there aren't any decent Caribbean products out here.
So I went to work trying different recipes. I contacted my cousin in Trinidad for her recipe but as the ingredients differ, it was hard to achieve the results I wanted. 6 months of cooking, sending samples to friends, sending samples to strangers, collating feedback and 9 recipes later, I hit the nail on the head.
Flavour has been the driving force during the creative process. How can we create a sauce that enhances your food and doesn't ruin it? I'm happy to say that I think we cracked it with the perfect balance of flavour & heat.
